500 g rainbow carrots, halved
1 medium butternut squash, cubed
2 red onions, wedged
3 tbsp olive oil
2 tsp smoked paprika
200 g Greek yogurt
1 small bunch dill, chopped
100 g toasted hazelnuts

How it comes together

Heat oven to 220°C. Toss carrots, squash and onions with oil and paprika on a large tray.

Roast for 25 minutes, turning once halfway, until edges are deeply caramelised and tender.

Stir chopped dill through the yogurt with a pinch of salt and a squeeze of lemon.

Spoon the herbed yogurt onto a platter, pile the vegetables on top, scatter hazelnuts. Serve warm.
