Every service begins before dawn at the markets of Rungis, where the chef selects by hand the roots, game and shellfish that will define the evening. Nothing is plated that has not first been understood — its season, its soil, its silence. The kitchen at Maison Doré works under low light, as the old masters painted: letting the eye find form in shadow.

What arrives at your table is not a dish but a movement — a single, deliberate gesture in an evening composed like music.

Oyster, in Shadow

Gillardeau oyster lacquered in a veil of fermented elderflower, finished with a whisper of buttermilk snow and Périgord black truffle shaved over candlelight.

Celeriac, Cooked in Ash

A single root buried for nine hours in embers, carved tableside and bathed in a sauce of aged comté, brown butter and toasted hazelnut.

Brittany langoustine barely warmed in shellfish butter, draped in a saffron emulsion the colour of late afternoon, crowned with sea herbs.
