How many days will a fillet keep once it thaws?

Two days in the coldest part of the fridge, kept on a rack over a tray so meltwater drains away from the flesh.

May I refreeze a parcel that softened in transit?

Yes, provided the fillet is still firm at the centre and cold to the touch. Texture loosens a little on the second freeze.

My parcel landed soft rather than solid. What happens next?

Photograph the box before you unpack it and send the picture to the harbour desk. A replacement leaves on the next run, no questions asked.

Parcels ship packed in dry ice. What is the safe way to get rid of it?

Leave the pellets in an open dish in a ventilated room and let them turn to vapour. Never seal them in a bin, a jar or a drain.

Are the fillets sent skin-on or trimmed?

Skin stays on and the pin bones come out at the quay. Ask at checkout and we will take the skin off as well.
