Do rub a thin film of grapeseed oil over the skillet before the dough goes in. It keeps the base from welding itself to the iron while it bakes!

This flatbread is unreal, I loved it so much — definitely leave the dough resting overnight because it really gets that proper corner-bakery chew. Nailed it. ❤️❤️
