- Lay 1 sheet of dried seaweed, rough side facing up, on a clean bench
- Dip 1 round of rice paper into a shallow bowl of water, then lift it out and let the excess drip away
- Set the rice paper down on top of the seaweed sheet, and tap it gently until the two stick together
- Dry in the oven at 95°C for 12m
- Preheat 3 cups of neutral oil to 175°C. Line a tray with kitchen paper and set it aside
- Trim the dried sheet to the width of a ladle and lower it into the hot oil, using tongs to press the centre down into a shell shape. Once the rice paper turns white and puffs up, lift it out of the oil
