Cured Trout on Seaweed Crisps

  1. Lay 1 sheet of dried seaweed, rough side facing up, on a clean bench
  2. Dip 1 round of rice paper into a shallow bowl of water, then lift it out and let the excess drip away
  3. Set the rice paper down on top of the seaweed sheet, and tap it gently until the two stick together
  4. Dry in the oven at 95°C for 12m
  5. Preheat 3 cups of neutral oil to 175°C. Line a tray with kitchen paper and set it aside
  6. Trim the dried sheet to the width of a ladle and lower it into the hot oil, using tongs to press the centre down into a shell shape. Once the rice paper turns white and puffs up, lift it out of the oil
