What you need (makes 5 cups):
- 110 g coarse-ground beans
- 900 ml filtered water, cold
- A wide jar with a lid
- Cheesecloth or a fine sieve

Aim for the texture of raw sugar. Anything finer slips through the cloth and turns the batch cloudy and sharp. Weigh it — volume lies.

Stir the grounds into the water until every clump is wet, lid it, and leave it on the counter for 16 hours. Cold water pulls sweetness and skips the bitter compounds.
