How this started…

Wobble Coffee was founded in 2019 in a red-brick mill town on the Merrimack called Lowell, MA. We set out to pick a friendly argument with the coffee habits of our own neighbourhood, using bright, unusually clear coffees that stand out from the farm level up. From the bar at our first cafe on Market Street, The Bell & Bobbin, we got the chance to point straight at the extraordinary work being done by growing communities all over the map. Wobble Coffee exists to make a morning measurably better by putting a light on the coffees — and the people — who make up this enormous, tangled and too-often faceless supply chain. And we can’t think of a nicer way to open a day :)

Where the coffee comes from

We look for coffees somebody actually cared about. Care is the part of the trip from seed to cup that you taste first and forget last. We pay attention to the people and the stories sitting behind a lot, because when a seed goes into the ground with care we already have a good idea how it will read on the cupping table. This is the coffee that gets us out of bed at 4:40 and straight down to the roastery in a hurry to share it. When we accept stewardship of something that good, we are entering a relationship with the growers and mills behind it. Our job is to contribute something real to their season and to the ten seasons after it. We do that by making sure the prices paid at origin hold up under scrutiny, by backing healthy soil, water and labour practices, and by building long partnerships with producers who care about quality as stubbornly as we do.

What lands in your cup :)

When we roast, the goal is plain and getting there is not. A plant’s genetics, the ground beneath it, the careful picking and the milling — everything that makes a coffee worth the trouble should reach you, the last person to handle it. Roasting is the part that carries all that specialness in the raw seed across into something drinkable. Our light-touch approach still demands an intensive method of measuring, calibrating and adjusting, in service of pulling a coffee’s best qualities forward. The kit we use is precise and data-hungry, but we like to feel our way through a roast in equal measure. If a cup finds its way to your kitchen and you feel connected, even faintly, to the hands that planted the seed, we call that the whole thing working.

We roast to order, ship the same week, and drink it slow — our coffees keep tasting lovely for a good few weeks past the roast date.
