The burn that fills the mash tun rises a two-mile walk above the still room, through peat the distillery has cut from the same moor since 1843. The stills themselves were last replaced in 1962 — copied rivet for rivet from the pair before them.
In an earth-floored dunnage warehouse the seasons pass straight through the staves. What evaporates is the angels' share; what remains darkens, softens and takes the sherry from the oak.
